Mrs. Fields Is Bankrupt!


Ok, if Mrs. Fields goes out of business I want her recipe to her Pumpkin Harvest Cookie! I love those cookies...every fall! YUM! Anyone have the Mrs. Fields Cookbook? Is it in there? I'll have to go to the bookstore & see! We had one in our mall & it left a number of years ago. Then I had to go about 1 hr north, maybe a bit more & then they went out of business! :-( If some guy really wanted to make me smile.... ;-) then again don't think that will make-up for everything & anything! HA! I better get some this fall just in case. Don't think I did last fall? I wonder if they will have them this year & when they will start? If anyone sees them at yours please let me know!!!

Pumpkin Harvest Cookies Yield: About 3 dozen

2 1/4 c. all-purpose flour
1 tsp. pumpkin pie spice
1/2 tsp. baking soda
2 sticks (1 cup) unsalted butter
1 1/2 c. (packed) dark brown sugar
1 c. solid-packed unsweetened pumpkin puree
2 large eggs
1 Tbl. vanilla extract (Always use pure vanilla extract. The imitation is awful.)
10 0z. white chocolate, coarsely chopped
1 c. pecan halves and pieces, toasted

Preheat the oven to 300 degrees F

In a small bowl, combine the flour, pumpkin pie spice, and baking soda.

In a medium bowl with an electric mixer, cream butter and sugar. Beat in the pumpkin puree. Beat in the eggs and vanilla. Beat in the flour mixture until just combined. Stir in the white chocolate and pecans.

Drop the dough by rounded tablespoons 2 inches apart onto an ungreased cookie sheet. Bake for 20 to 22 minutes, or until just set. Transfer to wire racks to cool.

Good thing I read the rest of the comments.  I was just getting ready to send you the recipe too and see that the others beat me to it.  Bake, eat and enjoy this fall !
